CopyCat Starbucks Lemon Loaf

Some months ago I had to bring a dessert to a friend's dinner and I really wanted to try something new. So what did I do? I went to my loyal Pinterest! And I found something I have never ever tried before! A Lemon Loaf! And not just any but a copycat one of Starbucks, which so far, the copycat recipes I have tried are actually really good! The Pin I found was by Jen from CincyShopper, here is a link to the recipe from her web and you can find the Pin here. Her recipes are AMAZING! You should go check them out!

The recipe itself is really easy and affordable. It makes 2 loaves which 1 loaf actually was good for 10 people, but if you want thicker slices, then it will feed fewer people. I did do some adjustments because here in Spain (where I currently live) there aren't some things that recipe called for, or they are very hard to find and when you do find them, they are VERY expensive.

The original recipe ingredients were:

CAKE:
1 box Yellow Cake Mix
4 Eggs
1/2 cup Milk
1 box (3.4 oz) Instant Lemon Pudding Mix
1/2 cup Vegetable Oil
8 oz Sour Cream
6 tbsp Lemon Juice
GLAZE:
3 cup Powdered Sugar
4 tbsp Lemon Juice





With the adjustments I made the recipe was now:

CAKE:
1 box Yellow Cake Mix
4 Eggs
1/2 cup Milk
1 box (3.4 oz) Instant Lemon Pudding Mix  
1/2 cup Vegetable Oil
8 oz Sour Cream  Greek Yogurt
6 tbsp Lemon Juice
GLAZE:
3 cup Powdered Sugar
4 tbsp Lemon Juice
added: some lemon zest

It wasn't a huge difference from the original one but if the one I made was amazing, I can't even imagine how amazing the original one is! I also added some lemon zest just to give it a bit more of lemon in it since I couldn't find the lemon pudding mix. After those small changes I followed the instructions carefully (ALWAYS FOLLOW THEM STRICTLY!). And after 50 minutes, which after 30 you can totally start smelling the yummy lemony cake scent...yum! 

Once they were done I prepared both of them and glazed them up. However, I did find the amount made to be ok, but it didn't turn up like the one in the picture, so maybe next time I will prepare it 2x. The picture I took it the glaze wasn't completely cooled so it looks lighter than the final result. Sorry about the quality of the picture, it was a quick picture I took for my then fiancee, and I hadn't planned on making a blog about this. And here you have my work of art! 



As I have mentioned before, this is one of the best recipes I have found on Pinterest, and everyone loved it! Everything from the texture and even the smell of it was amazing. Have you ever tried this recipe? Any thoughts or opinions?

Easy Tiramisu (Chef Recipe)
